Our walled kitchen garden supplies the restaurant with an abundance of year-round seasonal fruits, vegetables and salads.
Under the supervision of resident Horticulturalist David Butt, the garden has received full organic accreditation. David liaises with the kitchen daily to finesse our menus according to ideal ripening times and is a firm advocate of seasonal eating.
With a career in horticulture that spans three decades, David held senior posts at both Pencoed College and Carmarthen College, specialising in organic horticulture and forging close links with the Botanic Gardens of Wales.
